Nitrosamiinit

Nitrosamiinit, or nitrosamines, are a class of organic compounds that contain the N-nitroso group bonded to a nitrogen atom of a secondary amine. They are typically formed by nitrosation of secondary amines with nitrosating agents, such as nitrous acid or related nitrite sources.

Formation and occurrence: Nitrosamines can form under acidic conditions when nitrite from food additives or endogenous sources reacts with secondary amines. They can also be produced during industrial processes, in tobacco smoke, and in some cosmetic, rubber, and pharmaceutical contexts. Environmental formation can occur in water systems containing nitrite and amines.

Common examples include N-nitrosodimethylamine (NDMA) and N-nitrosodiethylamine (NDEA). The specific nitrosamine profile depends on the types of amines and nitrosating conditions present.

Health and toxicology: Many nitrosamines are potent or probable carcinogens in animal studies, and several are classified as potential human carcinogens by international agencies. Risk is influenced by exposure level, duration, and route (oral, inhalation, dermal). They can form endogenously in the stomach from ingested nitrites and amines, contributing to overall exposure.

Regulation and analysis: Monitoring of nitrosamines is common in drinking water, foods, and pharmaceuticals. Analytical methods include gas and liquid chromatography coupled with mass spectrometry. Regulatory bodies set guideline values and maximum permissible levels for certain nitrosamines to reduce exposure and associated health risks.
