Naniwabushi

Naniwabushi is a traditional Japanese dish originating from the Naniwa region, which is now part of Osaka. It is a type of okonomiyaki, a savory pancake, but with a unique twist. The dish is characterized by its distinctive shape, which resembles a small mountain or a mushroom, hence the name "naniwabushi," which translates to "Osaka mushroom." The pancake is made from a batter of flour, water, eggs, and various ingredients such as cabbage, pork, shrimp, and green onions. The batter is poured into a special mold, which gives the okonomiyaki its characteristic shape. Once cooked, the pancake is topped with okonomiyaki sauce, mayonnaise, and aonori (seaweed flakes), and sometimes katsuobushi (bonito flakes) for added flavor. Naniwabushi is typically served with a side of tonkatsu sauce and pickled ginger. It is a popular street food in Osaka and is often enjoyed as a casual meal or a snack.
