Microwaveconvection refers to a cooking technology that combines microwave heating with convection heating in a single appliance or mode. In a microwave-convection oven, a microwave source (typically a magnetron) generates microwaves that heat food from within, while a built‑in fan and heating element circulate hot air around the food to transfer heat to its surface. The two mechanisms can operate simultaneously or in alternating stages, enabling faster cooking and more even results than either method alone.

The microwave portion rapidly excites water molecules, producing internal heat while largely leaving the outer surface cooler. The convection portion moves hot air to the surface, promoting browning, crust formation, and more uniform exterior heating. This synergy allows microwave-convection appliances to reheat and cook foods quickly while achieving textures closer to conventional baking or roasting, including crisp edges and golden surfaces that microwaving alone typically cannot provide.

Common features include multiple modes such as microwave-only, convection-only, and combination microwave-convection; additional options may include a grill element or halogen heating for extra browning. Some models use flatbed or turntable designs and offer sensor-based cooking, programmable presets, and adjustable fan and temperature controls. The choice of cookware is important; microwave-safe glass or ceramic containers are suitable for the microwave mode, while metal racks or specialty cookware may be used in convection mode according to the manufacturer’s instructions.

Applications range from reheating leftovers and defrosting to baking small pastries, roasting vegetables, and cooking meat with a crispy exterior. Limitations include uneven results for very large items and the need to follow appliance guidelines for safe use and compatible cookware.
