Mentones
Mentones are a group of organic compounds that are isomers of menthol. They are characterized by a cyclohexanone ring with a methyl group and an isopropyl group attached. Specifically, mentones are cyclic ketones. There are three possible stereoisomers of mentone: l-menthone, d-menthone, and dl-menthone. L-menthone is the naturally occurring isomer found in various essential oils, most notably peppermint oil (Mentha piperita). D-menthone is less common in nature. Dl-menthone is a racemic mixture of the l- and d- forms.
Mentones possess a minty aroma and flavor, though generally less intense than menthol. Their physical properties,
In terms of chemical reactivity, mentones can undergo typical reactions of ketones, such as reduction to menthol
