Marjaiskeitto

Marjaiskeitto is a berry soup in Finnish cuisine. The term, a compound of marja 'berry' and keitto 'soup', is used in some dialects and contemporary recipe collections to denote a berry-based soup, and is closely related to the more common marjakeitto.

Ingredients and preparation: A typical recipe combines a mix of berries—such as mustikka (blueberry/bilberry), puolukka (lingonberry), vadelma (raspberry) and mansikka (strawberry)—with water or fruit juice. The mixture is simmered until the berries release their juice; sugar or honey is added to taste. Thickening may come from a small amount of potato starch, cornstarch, or by adding a splash of milk or cream.

Texture and processing vary: some cooks mash a portion of the berries to create a smoother, more uniform soup, while others leave the fruit whole for a chunkier texture. The finished soup can be either smooth or rustic.

Serving suggestions: Marjaiskeitto is served hot as a dessert or breakfast in winter, and cold as a refreshing summer dish. A dollop of cream or yogurt is common, and optional flavorings include vanilla, cinnamon, a touch of lemon zest, or a light drizzle of honey.

Cultural note: In standard Finnish, marjakeitto refers to berry soup; marjaiskeitto is a less common, regionally used variant. The dish reflects the Finnish culinary tradition of turning seasonal berries into simple, versatile foods that fit its climate and pantry.
