Levykkeismausta refers to an off-flavor in milk and dairy products that is often described as metallic, coppery, or resembling a printing plate. This undesirable taste is primarily caused by the oxidation of lipids within the milk. When fats in milk are exposed to oxygen, they can break down into compounds that impart this distinct metallic characteristic.

Several factors can contribute to the development of levykkeismausta. Exposure to light, particularly sunlight, is a significant trigger for lipid oxidation, especially in packaging that is not opaque. Heat can also accelerate this process. Furthermore, the presence of certain enzymes, like those from bacteria, can also play a role in breaking down fats and producing the off-flavor. The metal content of milking equipment or storage containers can sometimes contribute to the metallic note, though lipid oxidation is the more common cause.

Preventing levykkeismausta involves minimizing exposure to light and oxygen. Using opaque or light-blocking packaging is crucial. Storing milk at appropriate cold temperatures and promptly processing it after milking can also help. Maintaining clean milking equipment and controlling bacterial contamination are also important preventative measures. While the flavor is unappealing, levykkeismausta does not typically indicate a health hazard.
