Levyjäädyttimet, also known as plate freezers or plate chillers, are heat exchangers designed for rapid cooling or freezing of liquids or semi-liquid products. They operate by passing the product through narrow channels or between plates that are in direct contact with a refrigerant. This direct contact allows for highly efficient heat transfer, leading to significantly faster cooling or freezing times compared to other methods.

The construction typically involves a series of stacked metal plates, often made of stainless steel, with channels for both the product and the refrigerant. The plates are pressed together, forming a compact unit. Products like dairy, fruit purees, soups, sauces, and fish are commonly processed in plate freezers. The efficiency of the process helps to preserve the quality, texture, and nutritional value of the foodstuff by minimizing the formation of large ice crystals.

Operation involves pumping the product into the channels or between the plates, while a chilled refrigerant, such as ammonia or a brine solution, circulates through adjacent channels or on the other side of the plates. As the product flows, heat is rapidly transferred from the product to the refrigerant, causing it to cool or freeze. The speed of freezing is a key advantage, as it reduces the time food spends in the temperature danger zone, thus enhancing food safety.

Plate freezers are widely used in the food processing industry due to their compact size, energy efficiency, and hygienic design. They are relatively easy to clean and maintain, which is crucial for food safety regulations.
