Lactoseconsuming refers to the ability or practice of consuming lactose, the disaccharide sugar found in most mammalian milks. In biological terms, lactose consumption hinges on the presence of the enzyme lactase, which hydrolyzes lactose into the simple sugars glucose and galactose that can be absorbed by the small intestine.

In humans, lactase activity typically changes with age. Many adults experience lactase non-persistence, a reduction in lactase production after weaning, which can lead to lactose intolerance when lactose is consumed. A minority maintain lactase persistence, allowing them to digest lactose without adverse symptoms. The geographic and cultural distribution of lactase persistence corresponds to historical dairy farming practices; populations with a longer history of dairy consumption show higher frequencies of lactase persistence.

Lactose consumption can cause symptoms such as bloating, gas, abdominal pain, and diarrhea in those with lactose intolerance. Management strategies include limiting or avoiding lactose-containing foods, choosing lactose-free dairy products, using lactase enzyme supplements, or obtaining nutrients from non-dairy alternatives such as fortified plant milks.

In microbiology and food science, lactose-consuming organisms play important roles. Certain gut bacteria metabolize lactose, influencing gut ecology, while dairy fermentation cultures such as Lactococcus and Streptococcus species metabolize lactose to produce lactic acid, contributing to the texture and flavor of dairy products. Understanding lactose consumption thus spans nutrition, physiology, microbiology, and food technology, informing dietary choices and product development.
