Kurkumaväriä

Kurkumaväriä, also known as curcumin or E100, is a natural yellow pigment derived from the rhizomes of the turmeric plant (Curcuma longa). It is one of the most widely used natural food colorants globally, valued for its vibrant hue and perceived health benefits. The primary active compound responsible for the color is curcumin, a polyphenol.

The extraction process typically involves grinding turmeric rhizomes and then separating the curcumin using solvents. This results in a bright yellow powder that is then purified and standardized for food applications. Kurkumaväriä is approved for use in many countries as a food additive.

Its applications are diverse, appearing in a wide range of food products. It is commonly found in dairy products like cheese and yogurt, baked goods, confectionery, beverages, processed meats, and sauces. The color it imparts can range from a pale yellow to a deep golden orange, depending on the concentration and the food matrix.

Beyond its coloring properties, curcumin is also recognized for its antioxidant and anti-inflammatory potential, although the efficacy and absorption of curcumin from food sources can vary. In some cultures, turmeric and its extract have a long history of use in traditional medicine. Kurkumaväriä is generally considered safe for consumption within established limits.
