Korokki

Korokki is a Japanese dish, a type of croquette. It typically consists of a filling, most commonly mashed potato, mixed with ingredients such as minced meat, vegetables, or seafood. This mixture is then shaped into a log or oval, coated in panko (Japanese breadcrumbs), and deep-fried until golden brown and crispy.

While potato-based korokki are the most prevalent, variations exist. Sweet potato, kabocha squash, or even tofu can be used as the base. Common additions to the filling include finely chopped onions, carrots, peas, ground pork or beef, and sometimes shrimp or crab. Seasonings are usually simple, relying on salt, pepper, and sometimes a touch of nutmeg or soy sauce for flavor.

Korokki is a popular Western-influenced dish in Japan, often found in home cooking, bento boxes, and as a side dish in restaurants and izakayas. It can be served plain or with a side of tonkatsu sauce or other dipping sauces. The texture is a key characteristic, with a crunchy exterior contrasting with a soft, creamy interior.
