Kalkinlaatikko, meaning "lime box" in Finnish, refers to a traditional method of preserving food, particularly vegetables and roots, by storing them in a mixture containing lime. This practice was common in rural areas of Finland and other Nordic countries, primarily for extending the shelf life of produce throughout the long winter months.

The key ingredient, lime (calcium hydroxide), is believed to have several beneficial properties for food preservation. It can help to absorb moisture, creating a drier environment that is less conducive to the growth of mold and bacteria. Additionally, the alkaline nature of lime may inhibit the activity of certain enzymes that cause spoilage and browning. The lime would typically be mixed with sand or other inert materials to create a bedding medium. Vegetables such as carrots, beets, and potatoes would then be layered within this mixture, ensuring they were fully encased.

Kalkinlaatikko offered a practical solution for storing harvested crops in a cool, dark place, such as a root cellar or a dedicated storage pit. The preserved vegetables could then be used in cooking over the winter, providing essential nutrients when fresh produce was unavailable. While less common today due to modern refrigeration and preservation techniques, the practice represents an important aspect of historical Finnish food culture and resourcefulness.
