This defect is characterized by an absence of the expected texture or internal structure in a localized area. Instead of the characteristic eyes or a consistent curd matrix, a juustonullmustri appears as a dense, smooth, or devoid area within the cheese body.

The formation of a juustonullmustri is typically linked to issues during the cheesemaking process. These can include problems with the starter cultures or propionic bacteria that are responsible for creating the characteristic holes, insufficient or uneven distribution of these cultures, or localized variations in temperature or humidity during ripening.
