Interesterifiointia is a process used in the food industry to modify the physical properties of fats and oils. It involves rearranging the fatty acids on the glycerol backbone of triglycerides, the main components of fats and oils. This rearrangement can be achieved through chemical or enzymatic methods. Chemical interesterification typically uses catalysts like sodium methoxide at elevated temperatures. Enzymatic interesterification utilizes enzymes, such as lipases, which are more specific and can operate under milder conditions.

The primary goal of interesterification is to alter the melting point, solid fat content, and crystallization behavior of fats without changing their overall fatty acid composition. For example, interesterification can be used to create fats that are solid at room temperature but melt smoothly in the mouth, mimicking the properties of fats that would otherwise require hydrogenation. This process is particularly valuable for producing margarines, shortenings, and confectionery fats. By controlling the interesterification process, manufacturers can tailor the functional characteristics of fats to meet specific application requirements, such as improving spreadability or preventing oil separation in products. It is considered a more desirable alternative to full or partial hydrogenation, as it does not produce trans fatty acids.
