Glukozfruktoz

Glukozfruktoz, also known as glucose–fructose syrup, is a liquid sweetener composed of free glucose and free fructose. It is produced from starches (most commonly corn or wheat) by enzymatic processing: first breaking the starch down to a glucose-rich syrup, then partially isomerizing some glucose into fructose. The ratio of glucose to fructose varies by formulation, with the most common commercial forms containing about 42% fructose (HFCS-42) or about 55% fructose (HFCS-55). Other blends are available for specific applications.

In terms of properties, it is highly soluble, provides sweetness, and acts as a humectant and preservative; it remains liquid at ambient temperatures and blends easily into beverages, baked goods, dairy products, and processed foods.

Uses: Because it is cheaper and easier to use than sucrose in some contexts, it is widely used in soft drinks, fruit-flavored beverages, pastries, condiments, and processed foods.

Health and regulation: Like other added sugars, excessive consumption of glucose–fructose syrup is associated with increased energy intake and potential metabolic effects; however, health outcomes are generally linked to total sugar intake rather than any single ingredient.
