Gluconsäure

Gluconsäure is an organic acid with the chemical formula C6H12O7. It is a mild, non-corrosive acid derived from glucose. It is widely distributed in nature, found in fruits, honey, and wine. Industrially, gluconic acid is produced through the fermentation of glucose by various microorganisms, most notably *Aspergillus niger* and species of *Gluconobacter*.

The primary applications of gluconic acid and its salts, known as gluconates, are in the food, pharmaceutical, and industrial sectors. In food, it is used as an acidulant, a leavening agent, and a sequestrant, helping to prevent discoloration and improve texture. Sodium gluconate, for instance, is a common food additive. In pharmaceuticals, it serves as a calcium and iron supplement carrier due to its high solubility and bioavailability. Industrially, sodium gluconate is employed as a concrete admixture to retard setting and improve workability, as well as in cleaning agents and water treatment. Its low toxicity and biodegradability make it an environmentally friendly choice for many applications.
