Glikozidázokat, more commonly known as glycosidases, are a broad class of enzymes that catalyze the hydrolysis of glycosidic bonds. These bonds link saccharide units together in disaccharides, oligosaccharides, and polysaccharides, or link saccharides to other molecules like proteins (glycoproteins) or lipids (glycolipids). Essentially, glycosidases break down complex carbohydrates into simpler sugars.

These enzymes are ubiquitous in nature, found in virtually all organisms from bacteria and archaea to plants and animals. Their functions are diverse and critical. In digestion, for instance, animal glycosidases break down dietary carbohydrates like starch and lactose into absorbable monosaccharides such as glucose. In plants, they play roles in cell wall modification, defense mechanisms, and storage compound mobilization. In microorganisms, they are essential for nutrient acquisition and decomposition of organic matter.

Glycosidases are highly specific, often recognizing particular types of glycosidic bonds (e.g., alpha- or beta-linkages) and specific sugar residues. This specificity allows them to carry out precise biochemical transformations. The study of glycosidases is important in various fields, including biotechnology, medicine (e.g., understanding and treating lysosomal storage diseases where specific glycosidases are deficient), and food science. Their industrial applications include their use in the production of biofuels, pharmaceuticals, and food ingredients.
