Gelatinless refers to products that achieve a gelatinous texture without the use of animal-derived gelatin. Traditional gelatin is a protein obtained from the collagen of animal bones, skin, and connective tissues. Gelatinless alternatives are sought by individuals who avoid animal products for ethical, religious, or health reasons, as well as those with allergies or dietary restrictions such as vegetarianism, veganism, or kosher/halal requirements.

Common ingredients used to create gelatinless textures include plant-based gums and hydrocolloids. Agar-agar, derived from seaweed, is a popular substitute known for its firm gelling properties, often used in desserts, jellies, and as a binder. Pectin, also extracted from fruits, is widely used in jams, jellies, and gummy candies, providing a softer gel. Carrageenan, another seaweed extract, offers various textures from weak gels to firm ones and is used in dairy products, desserts, and processed meats. Xanthan gum and guar gum, derived from bacterial fermentation and guar beans respectively, are primarily used as thickeners and stabilizers but can contribute to a more viscous, less liquid consistency.

The development of gelatinless options has expanded the market for a wide range of foods, including gummy candies, desserts like panna cotta and marshmallows, and even some pharmaceutical capsules. These alternatives aim to replicate the mouthfeel and functional properties of gelatin, such as its ability to set, emulsify, and stabilize.
