Gajad
Gajad is a traditional Indian sweet, particularly popular in the states of Uttar Pradesh and Rajasthan. It is made primarily from groundnuts (peanuts) and jaggery. The preparation involves roasting the groundnuts, then coarsely grinding them. Jaggery is then melted and cooked to a specific consistency, often referred to as a 'pulak' or soft ball stage. The groundnuts are mixed into the molten jaggery, and the mixture is then spread onto a greased surface and cut into squares or diamonds while still warm. Sometimes, cardamom powder or ghee is added for enhanced flavor. Gajad is often enjoyed as a snack or dessert, especially during cooler months. Its texture is typically crunchy and chewy, with the sweetness coming from the jaggery. Variations of gajad exist, with some recipes incorporating sesame seeds or other nuts. It is a simple yet flavorful confection that highlights the natural tastes of its core ingredients.
