Common fructose-containing substances include fructose itself, sucrose (a disaccharide of glucose and fructose), high-fructose corn syrup, honey, agave nectar, certain fruit juices, and many processed foods and beverages. In practice, many foods and ingredients capitalize on the sweetness and functional properties of fructose, sometimes contributing to overall sugar content and caloric load.

Chemically, fructose is a monosaccharide with the formula C6H12O6 and exists in solution mostly in cyclic forms. It is a reducing sugar and can influence properties such as sweetness perception, browning reactions, and crystallization behavior in fructose-containing products. When combined with glucose, as in sucrose, or used in syrups, fructose can affect viscosity and hygroscopicity.

Metabolically, fructose is absorbed in the small intestine via the GLUT5 transporter and is primarily metabolized in the liver through fructolysis. This pathway has little direct requirement for insulin, but excessive intake of fructose-containing foods can contribute to metabolic effects such as increased de novo lipogenesis, elevated triglycerides, and, in some contexts, uric acid production.

Labeling and regulation contexts vary by jurisdiction. Some nutrition labels disclose total added sugars and may indicate the presence of fructose when relevant. The descriptor fructosecontaining is thus primarily a descriptive term used to flag the presence of fructose in ingredients, foods, or biological molecules, rather than a formal chemical category. In biochemistry, it can also apply to fructose-containing polymers and oligosaccharides, such as certain fructans.
