Farvegscarotenoids

Farvegscarotenoids are a class of naturally occurring pigments found in plants, algae, and some bacteria and fungi. They are responsible for the vibrant yellow, orange, and red colors seen in many fruits, vegetables, and flowers. The chemical structure of carotenoids consists of a long chain of carbon atoms with alternating double and single bonds, which is responsible for their ability to absorb light in the visible spectrum.

Others, such as lutein and zeaxanthin, accumulate in the retina of the eye and are believed to protect against age-related macular degeneration and cataracts. The absorption of carotenoids from food can be enhanced by dietary fats.
