Efervescência

Efervescência refers to the process of releasing gas in the form of bubbles from a liquid. This phenomenon typically occurs when a chemical reaction produces a gas, or when a gas dissolved in a liquid is released due to a change in pressure or temperature. The most common example is the fizzing observed when an effervescent tablet, such as an antacid or a vitamin supplement, is dissolved in water. These tablets contain solid acids and bases that react upon contact with water to produce carbon dioxide gas.

The release of gas creates bubbles that rise to the surface of the liquid and burst, creating the characteristic effervescent effect. This process is also observed in carbonated beverages, where carbon dioxide is dissolved under pressure. When the container is opened, the pressure decreases, causing the dissolved gas to come out of solution and form bubbles.

Beyond its culinary and medicinal applications, effervescence plays a role in various scientific and industrial processes. It is important in chemical reactions where gas evolution is a byproduct, and it can be used to agitate or aerate liquids.
