Bétaizomerek, often referred to as beta-isomers, is a term used in chemistry to describe a specific type of structural isomerism. This designation is particularly common in carbohydrate chemistry, where it relates to the configuration of substituents around a chiral center. In the context of sugars, particularly monosaccharides, the beta-configuration at the anomeric carbon is defined by the position of the hydroxyl group. Specifically, in the Haworth projection, the hydroxyl group on the anomeric carbon is depicted above the plane of the ring. This is in contrast to the alpha-isomer, where the hydroxyl group is below the plane.

The distinction between alpha and beta isomers is crucial because it significantly affects the chemical and physical properties of the molecule. These differences can impact how the isomers interact with other molecules, their biological activity, and their susceptibility to enzymatic hydrolysis. For instance, the difference between starch (composed of alpha-glucose units) and cellulose (composed of beta-glucose units) is solely due to this isomeric difference, leading to vastly different physical properties and biological roles. Enzymes that can break down starch, like amylase, are often unable to hydrolyze cellulose because they are specific to the alpha linkage.

The interconversion between alpha and beta isomers, known as mutarotation, occurs in aqueous solutions. This process involves the opening of the cyclic hemiacetal or hemiketal structure to form an acyclic intermediate, followed by re-cyclization. During this dynamic equilibrium, both the alpha and beta anomers are present, along with a small amount of the open-chain form. The ratio of alpha to beta anomers at equilibrium is typically influenced by thermodynamic stability.
