Botrytissienen

Botrytissienen is a condition that affects certain plants, primarily grapes, caused by the fungus Botrytis cinerea. This fungus, also known as gray mold, is ubiquitous in the environment and can infect plants under specific conditions. While often associated with spoilage and disease, Botrytis cinerea can, in some cases, contribute to desirable characteristics in wine production.

When Botrytis cinerea infects grapes under cool, humid conditions, it can lead to a condition called noble rot. Noble rot causes the grapes to dehydrate, concentrating their sugars, acids, and flavors. This concentrated must is then used to produce intensely sweet and complex dessert wines, such as Sauternes and Tokaji. The presence of the fungus also contributes unique aromatic compounds, often described as honey, apricot, or ginger notes.

However, under warmer and wetter conditions, Botrytis cinerea can cause a different form of infection known as gray rot. This type of infection is detrimental to grape quality, leading to off-flavors, spoilage, and reduced sugar content. It can also promote the growth of other microorganisms, further compromising the grapes. Management strategies in vineyards focus on controlling humidity and airflow to minimize the risk of undesirable gray mold development, while cultivating the conditions that favor noble rot when desired.
