Bakwai

Bakwai is a popular snack originating from North India, particularly prevalent in regions like Punjab and Haryana. It is a deep-fried, savory dish made primarily from gram flour (besan) and various spices. The dough is typically prepared by mixing gram flour with water, salt, chili powder, turmeric, and sometimes carom seeds (ajwain) for added flavor and digestive properties.

The dough is then extruded through a special tool called a 'chakli maker' or 'sev maker' directly into hot oil, forming intricate, coiled shapes. Alternatively, it can be flattened and cut into diamond or strip shapes. Bakwai is fried until golden brown and crisp. It is often enjoyed as a tea-time snack and is also a common accompaniment during festivals and gatherings. The texture is crunchy, and the taste is a balance of spicy and savory. Different regional variations might include the addition of other flours, such as rice flour for extra crispiness, or a wider array of spices like cumin and coriander.
