Antiklumpemidler

Antiklumpemidler, or anti-caking agents, are food additives designed to prevent lumping and improve the free-flow of powdered or granulated ingredients during processing, packaging and storage. They help keep products such as salt, sugar, flour and spice blends pourable and easy to scoop, and they reduce sticking to equipment.

They work mainly by moisture management and surface coating. Some anti-caking agents absorb water, lowering the moisture on particle surfaces and creating a barrier; others coat particle surfaces to reduce contact and friction between particles, inhibiting clumping.

Common substances include silicon dioxide (silica), calcium silicate and magnesium carbonate, as well as certain modified starches and cellulose derivatives. The choice of agent depends on the product matrix, processing conditions, sensory considerations, and regulatory approvals. Anti-caking agents are used in very small amounts, typically a fraction of a percent to a few percent by weight, depending on the product and regulatory limits.

Regulatory aspects: In many countries they are approved food additives and must be listed on ingredient labels with the function clearly indicated. Maximum permitted levels vary by jurisdiction and product type.

Applications and considerations: They are widely used in salt, powdered sugar, dry mixes, spices, dried soups and other dry food products. While considered safe within approved limits, some individuals may have sensitivities, and certain anti-caking agents can affect texture or taste if used in excess.
