Ülessulatamist refers to the process of thawing frozen food. This is a crucial step in food preparation to ensure safe consumption and optimal cooking. Improper thawing can lead to the growth of harmful bacteria, increasing the risk of foodborne illness.

There are several recommended methods for ülessulatamist. The safest method is to thaw food in the refrigerator. This allows the food to thaw slowly at a consistently cold temperature, inhibiting bacterial growth. Another safe method is to thaw food in cold water. The food must be sealed in a leak-proof bag and submerged in cold tap water, which should be changed every 30 minutes to maintain a safe temperature. For quicker thawing, food can be cooked directly from its frozen state, although cooking times will be longer. Microwaving is also an option, but food should be cooked immediately after thawing using this method, as some areas may begin to cook during the microwave process.

It is generally advised against thawing food at room temperature on the countertop. The outer layers of the food can reach temperatures within the "danger zone" (between 40°F and 140°F or 4°C and 60°C) where bacteria multiply rapidly, even if the center remains frozen. Once food has been thawed, it should be cooked and consumed promptly. Refreezing thawed food can degrade its quality and may also pose a safety risk if not handled correctly.
