Überkochen is a German term that translates to “to boil over” in English. It describes the situation in which liquid in a pot starts to foam and bubble up and spills over the edge of the pot, often after vigorous boiling or when the liquid is overheated.

Causes vary but commonly include high heat, a pot that is too full, or ingredients that foam readily such as milk, starch-rich sauces, or sugar solutions. As the liquid heats, bubbles form and rise; if the boiling continues or steam becomes trapped, the foam can rise above the rim and spill.

Prevention relies on kitchen technique and pot choice. Use a wide pot with ample headspace and avoid filling liquids more than about two-thirds full. Reduce heat as soon as boiling begins, stir occasionally to disrupt foam, and consider leaving the lid ajar to vent steam. A practical tip is to lay a wooden spoon across the top of the pot to burst foam as it forms, or to remove the pot from direct heat momentarily.

If overboiling occurs, turn down the heat and remove the pot from the heat source until the foam subsides. Wipe up spills promptly to prevent scorching and rewash the pot if needed.
