Underripening refers to a stage in the development of fruits or vegetables where they have not yet reached full maturity and ripeness. This can manifest in several ways, including a lack of characteristic flavor, sweetness, or texture. For example, an underripe fruit might be hard, tart, and not sweet compared to its ripe counterpart. The color may also be less vibrant or characteristic of its fully ripe state.

The chemical and physical changes that occur during ripening, such as the conversion of starches to sugars, the development of aromatic compounds, and softening of tissues, have not fully taken place in an underripe product. This can affect its palatability and suitability for consumption. In some cases, underripening is a desirable characteristic, such as with certain varieties of apples or pears that are preferred for their tartness when not fully ripe. However, for most fruits and many vegetables, underripening is considered a defect.

Factors such as harvest time, environmental conditions during growth, and post-harvest handling can all contribute to underripening. Early harvesting before the plant has had sufficient time to fully develop the fruit or vegetable is a common cause. Exposure to cold temperatures before ripening is complete can also halt or slow the ripening process, leading to underripe produce. The degree of underripening can vary, from slightly immature to completely unripe.
