Sylkirauhaseritystä refers to the production and secretion of saliva by the salivary glands. Humans have three pairs of major salivary glands: the parotid, submandibular, and sublingual glands, as well as numerous minor salivary glands scattered throughout the oral mucosa. Saliva plays a crucial role in maintaining oral health and facilitating digestion.

The composition of saliva is primarily water, but it also contains electrolytes, mucus, antibacterial compounds, and enzymes. Amylase, for example, begins the digestion of carbohydrates in the mouth. Mucin, a component of mucus, lubricates food, aiding in swallowing and speech. Saliva's buffering capacity helps neutralize acids produced by bacteria, preventing tooth decay. Furthermore, it contains lysozyme and antibodies that inhibit bacterial growth and protect against oral infections.

Salivary gland secretion is regulated by the autonomic nervous system. Both parasympathetic and sympathetic stimulation can influence saliva production, though parasympathetic stimulation is the primary driver of copious, watery saliva. Factors such as the sight, smell, taste, and even thought of food can trigger salivation. Conversely, dehydration, certain medications, and specific medical conditions can lead to decreased saliva production, a condition known as xerostomia or dry mouth. This can have significant consequences, including difficulty chewing and swallowing, increased risk of dental caries, and oral discomfort.
