Sulfiteja, or sulfites, are chemical species derived from sulfurous acid (H2SO3) that include the sulfite (SO3^2−) and bisulfite (HSO3−) ions and their salts. Common forms encountered in commerce are sodium sulfite, sodium bisulfite, potassium bisulfite, and metabisulfites such as sodium metabisulfite. When dissolved or added to aqueous solutions, metabisulfites release sulfite species that act as antioxidants and preservatives.

Uses: Sulfites are widely used in food and beverages to prevent enzymatic browning and spoilage by inhibiting oxidation and microbial growth. They are common in wines, dried fruits, fruit juices, pickled products, and certain processed vegetables. They are also used in photography, textile processing, pulp and paper production, and some pharmaceutical applications. The sulfite response can occur naturally during fermentation, so trace amounts may be present in many foods even without added preservative.

Health and safety: Some individuals have sulfite sensitivity, especially among people with asthma, who may experience wheezing or chest tightness after ingestion or inhalation. Reactions vary in severity. Regulatory agencies require labeling of foods and beverages to indicate added sulfites above a certain threshold; maximum permitted levels vary by jurisdiction and product.

Chemistry and environment: Sulfites can be oxidized to sulfate under environmental conditions. They are relatively stable to heat but can be affected by pH, temperature, and oxygen exposure. In drinking water or industrial effluents, sulfites are managed to avoid over-acidification and meet regulatory discharge limits.
