Shengjian, also known as shengjian baozi, is a popular pan-fried bun originating from Shanghai, China. It is a type of dim sum characterized by its crispy bottom, soft and fluffy top, and savory, juicy filling.

The preparation of shengjian involves several steps. First, a leavened dough is made. A filling, typically ground pork mixed with seasonings like soy sauce, Shaoxing wine, and ginger, is prepared. Small portions of the dough are flattened, filled with the meat mixture, and then sealed. The buns are then fried in a large, flat-bottomed pan, often lined with a thin layer of oil. They are cooked in batches, first on the bottom until golden brown and crispy, and then water is added to the pan, and the lid is placed on top to steam the buns until the dough is fully cooked and fluffy. Sesame seeds and chopped scallions are often sprinkled on top during the steaming process.

The distinctive texture and flavor of shengjian make it a beloved street food and snack in Shanghai and other parts of China. The contrast between the crisp, golden-brown bottom and the soft, steamed top, along with the rich, flavorful meat filling, is a key appeal. It is often eaten hot, straight from the pan, with the juicy interior requiring careful consumption to avoid burning oneself. While pork is the most common filling, variations with other meats or vegetables can also be found.
