Rasvahappohännät is a Finnish term that translates to "fatty acid tails" and refers to the non-polar, hydrophobic hydrocarbon chains that form the end of a fatty acid molecule. Fatty acids are carboxylic acids with a long aliphatic chain, which can be saturated or unsaturated. The primary structure of a fatty acid consists of a carboxyl group (-COOH) at one end and a hydrocarbon chain at the other. The carboxyl group is hydrophilic, meaning it is attracted to water, while the fatty acid tail is hydrophobic, repelling water.

This amphipathic nature, having both hydrophilic and hydrophobic parts, is fundamental to the behavior of fatty acids in biological systems. In aqueous environments, fatty acid molecules tend to arrange themselves in ways that minimize contact between their hydrophobic tails and water. This property is crucial for the formation of cell membranes, where fatty acid tails of phospholipids face inwards, creating a barrier that separates the internal environment of the cell from its external surroundings.

The length and degree of saturation of the fatty acid tail significantly influence the physical properties of the fatty acid and the lipids derived from it. Conversely, shorter and unsaturated fatty acid tails, which contain one or more double bonds, introduce kinks and disrupt close packing, resulting in greater fluidity and lower melting points.
