Paneeritud refers to a cooking technique where food is coated in breadcrumbs before frying or baking. The term is of Estonian origin, meaning "breaded." This method creates a crispy outer layer and helps to keep the food moist during cooking.

The process typically involves three steps. First, the food, which can be meat, fish, vegetables, or even cheese, is usually dredged in flour. This dry coating helps the subsequent layers adhere better. Second, the floured item is dipped into a wet binder, most commonly beaten eggs. Finally, the food is thoroughly coated in breadcrumbs, which can be fine or coarse depending on the desired texture.

Paneeritud dishes are popular in many cuisines worldwide, often with regional variations in the type of breadcrumbs or seasonings used. Common examples include schnitzel, fish and chips, and chicken nuggets. The breadcrumb coating not only adds a satisfying crunch but also contributes to the browning and flavor of the dish.
