Monoglüseridler, also known as monoglycerides, are a class of lipids. Chemically, they are esters formed from glycerol and a single fatty acid molecule. Glycerol is a simple alcohol with three hydroxyl groups, and in a monoglyceride, one of these hydroxyl groups has reacted with the carboxyl group of a fatty acid to form an ester linkage. The remaining two hydroxyl groups on the glycerol backbone are typically free.

Monoglycerides are found naturally in small amounts in animal fats and vegetable oils, and they are also produced commercially through the esterification of glycerol with fatty acids or by the interesterification of triglycerides. Their amphipathic nature, meaning they have both hydrophilic (water-attracting) and hydrophobic (water-repelling) properties, makes them effective emulsifiers. This property allows them to stabilize mixtures of oil and water, preventing them from separating.

Because of their emulsifying capabilities, monoglycerides are widely used as food additives. They can be found in a variety of products, including baked goods, ice cream, margarine, and chewing gum, where they contribute to texture, stability, and shelf life. They are also utilized in cosmetics and pharmaceuticals for similar emulsifying and stabilizing purposes. Their safety as food additives has been evaluated by regulatory bodies, and they are generally considered safe for consumption within specified limits.
