The name derives from the Finnish word lisä, meaning “additional,” and leipä, which means “bread.” Historically, it was created as a way to extend the limited supply of rye flour during periods of scarcity, by incorporating barley or oat flour into the dough.

The pastry dough is typically leavened with natural yeast and enriched with a small amount of butter and milk. After a short rest, the dough is flattened and rolled into a long oval shape. A distinctive feature of the recipe is a pattern of shallow indentations cut into the surface, intended to trap a thin oil or butter layer that provides a glossy finish when baked. The dough is rolled, sliced into individual portions, and baked at moderate temperatures until golden brown. During the last few minutes of baking, a drizzle of honey or sugar syrup may be applied to create a slightly caramelized crust.

Lisleivistä is commonly served during regional festivals, particularly in autumn, accompanied by local cheeses or smoked fish. Many families claim a secret family variation that incorporates dill or caraway seeds, giving the pastry a unique aromatic profile.
