Lipofiliäisyys, sometimes referred to as lipophilicity or hydrophobicity, is a fundamental chemical property that describes the tendency of a substance to dissolve in fats, oils, lipids, and other nonpolar solvents. It is the opposite of hydrophilicity, which describes a substance's tendency to dissolve in water or other polar solvents. This property is often quantified using a partition coefficient.

The partition coefficient (often denoted as P or log P) is a ratio of a compound's concentration in a lipid phase (typically octanol) to its concentration in an aqueous phase (typically water) at equilibrium. A high partition coefficient indicates that the substance preferentially dissolves in the lipid phase, meaning it is lipophilic. Conversely, a low partition coefficient indicates hydrophilicity. The logarithm of this ratio, log P, is commonly used because it spans a wide range of values more conveniently.

Lipofiliäisyys is a crucial factor in various scientific disciplines. In pharmacology, it influences how drugs are absorbed, distributed, metabolized, and excreted (ADME). Highly lipophilic drugs can readily cross cell membranes, which are composed of lipid bilayers, leading to better absorption and distribution into tissues. In environmental science, lipofiliäisyys affects the environmental fate and transport of chemicals. Lipophilic substances tend to accumulate in the fatty tissues of organisms (bioaccumulation) and can persist in the environment, posing risks to ecosystems. In the food industry and cosmetics, lipofiliäisyys plays a role in the solubility and stability of ingredients and the sensory properties of products.
