This refers to the inherent characteristic of lipids, which are a broad group of naturally occurring molecules that include fats, waxes, sterols, fat-soluble vitamins, monoglycerides, diglycerides, triglycerides, and phospholipids. A defining feature of lipids is their hydrophobic nature, meaning they repel water. This hydrophobicity stems from their chemical structure, which is predominantly composed of long hydrocarbon chains. These nonpolar hydrocarbon chains do not readily interact with polar water molecules.
Consequently, lipids do not dissolve in water, which is a polar solvent. Instead, they tend to dissolve
