Kuivumis is the process of removing moisture from a material, yielding a dry product or supporting subsequent processing. The term, derived from the Estonian root "kuiv" meaning dry and the suffix "-umis" forming a gerund, is used in technical contexts in Estonia and Finland to denote dehydration or drying operations across multiple industries.

Industrial drying techniques include natural methods such as sun or air drying, as well as mechanical processes such as oven drying, hot-air drying, vacuum drying, spray drying, freeze-drying, infrared drying, and microwave drying. The choice depends on the material properties, desired moisture content, energy efficiency, and impact on quality; for instance, heat-sensitive foods may be dried by freeze-drying to minimize texture loss, while bulk solids may be dried by drum or conveyor-type dryers.

Applications span food preservation (fruits, vegetables, meats, herbs), pharmaceuticals and botanicals, timber and paper processing, ceramics, and textile finishing.
