Kashrutsääntöjä, often referred to as kashrut or kosher laws, are a set of Jewish dietary regulations derived from the Torah, primarily found in Leviticus. These laws dictate which foods are permissible to eat and how they must be prepared. The word "kosher" itself means "fit" or "proper" in Hebrew and refers to food that adheres to these guidelines.

A fundamental aspect of kashrut involves the separation of meat and dairy. These two food categories cannot be cooked, served, or eaten together. There are also specific rules regarding the slaughter of animals, known as shechita, which must be performed by a trained ritual slaughterer (shochet) to ensure the animal is killed humanely and quickly, minimizing suffering. Certain parts of the animal, such as blood and the sciatic nerve, are also forbidden.

Different categories of food have their own set of rules. Meat from mammals and poultry are subject to the strictest regulations. Fish with fins and scales are considered kosher, while shellfish and other seafood are not. Fruits, vegetables, and grains are generally considered kosher, but must be checked for insects, which are forbidden. Wine and grape juice also have specific production requirements to be deemed kosher.

Observance of kashrut varies among Jewish individuals and communities. Some adhere strictly to all the laws, while others may observe them more leniently. The preparation of kosher food often involves specific utensils, cookware, and even separate kitchens to maintain the separation of meat and dairy and prevent cross-contamination. Rabbis and kosher certification agencies play a crucial role in overseeing and certifying that food products meet the requirements of kashrut.
