Horseradishtype is a nontechnical label used to refer to the varieties of horseradish and the forms in which it is processed for culinary use. In botany, horseradish refers to Armoracia rusticana, a hardy perennial grown for its large underground root. The term covers both the raw roots used fresh and the many prepared products derived from them, including condiments and sauces.

Root characteristics and culinary forms. Horseradish can be harvested as long roots designed for storage or shorter roots for fresh use. The “type” of horseradish often denotes the product form: fresh horseradish grated from unprocessed roots, prepared horseradish that has been ground and stabilized with vinegar, and horseradish sauces that mix the root with dairy, mayo, or other flavorings. Pungency varies with age, variety, and processing.

Pungency and chemistry. The fiery taste results from enzymatic reactions when the root is damaged. Myrosinase converts glucosinolates into volatile isothiocyanates, which produce heat and aroma. Freshly grated horseradish is typically hottest soon after preparation and can soften with exposure to air, heat, and storage.

Cultivation and storage. Horseradish is a robust, clump-forming plant suited to temperate climates. Roots are typically harvested in late fall and can be stored in cool, humid conditions. Commercial products often extend shelf life with vinegar or other stabilizers, which also moderate heat and flavor.

Uses and safety. Horseradish is widely used as a condiment in European and North American cuisines, often paired with beef, fish, or potatoes. It should be used in moderation by individuals with mucous membrane sensitivity, and gloves may be advisable during preparation to avoid skin irritation.
