Glycerolipideren, also known as glycerolipids, are a class of lipids characterized by a glycerol backbone. Glycerol is a simple three-carbon alcohol. In glycerolipids, one, two, or all three of the hydroxyl groups of the glycerol molecule are esterified with fatty acids. Fatty acids are long hydrocarbon chains with a carboxyl group at one end.

When one hydroxyl group is esterified, the resulting molecule is a monoacylglycerol. If two hydroxyl groups are esterified, it is a diacylglycerol. When all three hydroxyl groups are esterified, the molecule is a triacylglycerol, commonly known as a triglyceride. Triacylglycerols are the primary form of fat storage in animals and plants. They are also a major component of dietary fats.

The properties of glycerolipids depend on the types of fatty acids attached to the glycerol backbone. Fatty acids can be saturated, meaning they contain no carbon-carbon double bonds, or unsaturated, meaning they contain one or more carbon-carbon double bonds. The degree of saturation influences the melting point and physical state of the glycerolipid. For example, saturated fatty acids tend to pack more tightly, resulting in fats that are solid at room temperature, while unsaturated fatty acids can introduce kinks that prevent tight packing, leading to oils that are liquid at room temperature. Glycerolipids play crucial roles in energy storage, cell membrane structure, and as signaling molecules within cells.
