Glutenowy is a Polish adjective meaning gluten-containing or gluten-related. In nutrition and food labeling, it describes foods or ingredients that include gluten, a family of storage proteins found in cereal grains, most notably wheat. The gluten complex mainly consists of glutenin and gliadin, which form an elastic network when mixed with water, giving dough its structure and chew.

Gluten is also present in barley (hordein) and rye (secalin); oats do not contain gluten but may be contaminated with gluten during processing. Some individuals experience adverse reactions to gluten: celiac disease is an autoimmune condition triggered by gluten in genetically predisposed individuals, causing damage to the small intestine; others have wheat allergy or non-celiac gluten sensitivity. For these people, products described as glutenowy may be unsuitable, while gluten-free options are sought.

Regulatory labeling in the European Union, including Poland, allows products to be labeled gluten-free if their gluten content is not more than 20 mg/kg. The term glutenowy may appear in product descriptions to indicate the presence of gluten, or be used in contrast with gluten-free items. Manufacturers implement controls to prevent cross-contamination and may pursue gluten-free certification for targeted products.

In cooking and baking, glutenowy ingredients contribute texture and structure to bread, pastries, and many processed foods; gluten-free formulations rely on alternative proteins and binders to mimic these properties. The word glutenowy thus enters both linguistic and regulatory discussions of diet, nutrition, and food production.
