futomaki

Futomaki is a type of makizushi (rolled sushi) characterized by a thick roll wrapped in nori seaweed. Unlike thinner makizushi varieties, futomaki uses multiple fillings arranged in a line inside the rice and is typically served in bite-sized slices.

Typical fillings vary by region and season, but commonly include tamagoyaki (sweet rolled egg), cucumber, kanpyo (dried gourd), and shiitake mushrooms. Other popular fillings include fish or seafood such as tuna, crab stick (kanikama), or salmon, as well as avocado or pickled vegetables. The rice is seasoned with vinegar, sugar, and salt, as with other sushi.

Preparation involves laying a sheet of nori on a bamboo mat, spreading an even layer of seasoned rice over it, and arranging the fillings in a line along the center. The roll is then tightly rolled with the mat and sealed. After rolling, the log is cut into six to eight pieces for serving. Futomaki is commonly served with soy sauce, pickled ginger, and wasabi, and appears in homes, bento boxes, and at sushi shops and parties.
