Etikkabakteerit is a general term referring to a group of bacteria that are capable of producing acetic acid, commonly known as vinegar. These bacteria belong to the genera Acetobacter, Gluconobacter, and Komagataeibacter, among others. They are aerobic, meaning they require oxygen to survive and function. A key characteristic of etikkabakteerit is their ability to oxidize ethanol (alcohol) into acetic acid through a process called acetic acid fermentation. This process is fundamental to the production of vinegar from alcoholic beverages like wine, beer, and cider.

These microorganisms are ubiquitous in nature and can be found on fruits, flowers, and in sugary solutions. They play a significant role in various natural processes and industrial applications. In food production, they are essential for creating different types of vinegar, each with distinct flavors and aromas depending on the starting material and the specific bacterial strains involved. Beyond vinegar production, some etikkabakteerit are also utilized in the synthesis of other compounds, such as cellulose by Komagataeibacter xylinus, which can be used to produce bacterial cellulose for various applications.
