Etikkabakteerit is a general term referring to a group of bacteria that are capable of producing acetic acid, commonly known as vinegar. These bacteria belong to the genera Acetobacter, Gluconobacter, and Komagataeibacter, among others. They are aerobic, meaning they require oxygen to survive and function. A key characteristic of etikkabakteerit is their ability to oxidize ethanol (alcohol) into acetic acid through a process called acetic acid fermentation. This process is fundamental to the production of vinegar from alcoholic beverages like wine, beer, and cider.
