Emulsification is a process by which two or more immiscible liquids are mixed together to form a stable or semi-stable suspension. Immiscible liquids are liquids that do not naturally mix, such as oil and water. Emulsification is typically achieved by the addition of an emulsifying agent, also known as an emulsifier. An emulsifier is a substance that stabilizes the emulsion, preventing the immiscible liquids from separating.

Emulsifiers work by having molecules with both hydrophilic (water-attracting) and lipophilic (oil-attracting) parts. These molecules orient themselves at the interface between the oil and water droplets, reducing the interfacial tension and forming a protective layer around the droplets. This layer prevents the droplets from coalescing, thereby stabilizing the emulsion. Common examples of emulsifiers include lecithin, which is found in egg yolks, and various synthetic surfactants.

Emulsification is a crucial process in many industries and everyday applications. In the food industry, it is used to create products like mayonnaise, salad dressings, ice cream, and margarine. In the pharmaceutical industry, emulsions are used to deliver medications, improving their solubility and bioavailability. Cosmetics and personal care products, such as lotions and creams, also rely on emulsification for their texture and stability. Industrial applications include the production of paints, lubricants, and asphalt. The type of emulsion formed can be either oil-in-water (O/W), where oil droplets are dispersed in water, or water-in-oil (W/O), where water droplets are dispersed in oil.
