Doldurmam is a traditional Turkish pastry, often described as a type of savory pancake or flatbread stuffed with various fillings. Its name, derived from the Turkish verb "doldurmak" meaning "to fill," directly refers to its characteristic preparation.

The dough for doldurmam is typically made from flour, water, and salt, similar to a simple pancake batter, but often slightly thicker. Once the batter is poured onto a hot, oiled pan, it is allowed to partially set. Before it is fully cooked on one side, a filling is added to one half of the pancake.
