Distilleerderijen are facilities where alcoholic beverages or other substances are produced through the process of distillation. Distillation is a method of separating components of a liquid mixture by selective boiling and condensation. In the context of alcoholic beverages, distillation is used to increase the concentration of alcohol. This is achieved by heating the fermented mixture, causing the alcohol to vaporize at a lower temperature than water. The alcohol vapor is then cooled and condensed back into a liquid, resulting in a spirit with a higher alcohol content than the original fermented mash.

The raw materials used in distilleries vary depending on the desired product. For example, whiskey distilleries typically use grains like barley, corn, rye, or wheat. Rum distilleries use sugarcane molasses or juice. Tequila distilleries use the agave plant. The fermentation process, which precedes distillation, converts sugars into alcohol using yeast. After fermentation, the liquid, often called "wash" or "beer," is transferred to stills.

Stills come in various forms, most commonly pot stills and column stills. Pot stills are traditionally used for producing spirits with complex flavors, while column stills are more efficient for producing high-proof, neutral spirits. The distillate from the still is then often aged in wooden barrels, which imparts color, flavor, and aroma to the final product. The type of wood, the age of the barrel, and the aging conditions all play a significant role in the character of the spirit. Beyond alcoholic beverages, distilleries are also used to produce essential oils, perfumes, and industrial solvents through distillation.
