Dampfbildung, also known as vaporization or boiling, is the process by which a substance in a liquid state changes to a gaseous state due to an increase in temperature and/or pressure. This transformation occurs when the vapor pressure of the liquid equals the surrounding atmospheric pressure. At this point, the liquid molecules have enough kinetic energy to overcome the intermolecular forces holding them together and escape into the air as vapor.

The temperature at which this occurs is called the boiling point. The boiling point of a substance is dependent on the ambient pressure. For instance, water boils at 100 degrees Celsius (212 degrees Fahrenheit) at standard atmospheric pressure at sea level. At higher altitudes, where atmospheric pressure is lower, water boils at a lower temperature. Conversely, under increased pressure, the boiling point rises.

Dampfbildung is a fundamental thermodynamic process with numerous applications. It is crucial in many industrial processes such as power generation, where steam produced from heating water drives turbines. It is also essential in cooking, distillation, and in the operation of steam engines. The rate of dampfbildung can be influenced by factors such as the surface area of the liquid, the presence of impurities, and the rate at which heat is supplied. In everyday life, we observe dampfbildung when water boils in a kettle or when sweat evaporates from our skin, helping to cool the body.
