Chemoreceptory, in biology, refers to the ability of organisms to detect chemical stimuli through specialized sensory receptors. These chemoreceptors sense dissolved chemicals in the environment or within the body and relay information to the nervous system or other signaling pathways. The term can describe both the receptors themselves and the sensory processes they support.

In animals, chemoreception is primarily organized around olfactory (smell) and gustatory (taste) systems. Olfactory receptors are typically expressed in sensory neurons of the nasal cavity and recognize volatile odorants. Gustatory receptors reside in taste buds and detect basic taste modalities. In many vertebrates, sweet, umami, and bitter tastes are mediated by G protein-coupled receptors, while sour and salty tastes involve ion channels. The binding of chemical ligands to these receptors triggers intracellular signaling cascades that generate receptor potentials and drive neural signaling to brain regions that interpret taste and smell.

Mechanistically, many chemoreceptors are membrane proteins that initiate signaling via second messenger systems. G protein-coupled receptors commonly activate cyclic nucleotide or phosphoinositide pathways, leading to the opening of ion channels, cell depolarization, and neurotransmitter release. In olfaction, this often results in rapid, odor-specific neural coding; in taste, it contributes to the perception of flavor and nutritional value.

Chemoreception is not limited to animals. Bacteria use chemoreceptors to navigate chemical gradients, guiding movement toward nutrients or away from toxins, a process known as chemotaxis. In plants and single-celled organisms, chemoreception underpins responses to chemical signals such as hormones, nutrients, and defense compounds. Studied broadly, chemoreceptors have applications in medicine, food science, pest management, and the detection of disease biomarkers.
