Cask conditioned, also known as cask ale or real ale, refers to beer that is fermented and conditioned in a cask without the use of artificial carbonation or further processing. This traditional method of brewing and serving beer is primarily found in the United Kingdom. The cask is a large vessel, typically made of wood or metal, from which the beer is drawn directly.

During the conditioning process within the cask, the beer undergoes a secondary fermentation. This naturally produces a low level of carbonation. Unlike beers served from kegs, which are often force-carbonated with CO2, cask conditioned beer relies on this natural effervescence. The beer is also unfiltered and unpasteurized, meaning it retains more of its natural flavors and aromas.

Serving cask conditioned ale requires specific equipment and techniques. It is usually served at cellar temperature, which is cooler than room temperature but warmer than typical refrigerated beer. A hand pump, often called a "beer engine," is used to draw the beer from the cask. This pump introduces a small amount of air into the cask, which helps to propel the beer without adding significant carbonation or oxygenating it to the point of spoilage. The beer is typically served into a glass, allowing for a full appreciation of its character. Cask conditioning is valued by many for its complex flavors and smooth texture.
